Liz’s Kitchen – Marcy’s Buckeye Balls Recipe

Posted on January 21, 2019January 21, 2019 by Liz Mantel

This is a holiday staple in Ohio! The Buckeye is the state nut and we’re nuts about it! This sugary peanut butter balls dipped in chocolate are so addictive!  My Aunt Marcy always made them and we always sought them out when we went over to her house! I called and asked if she would share the recipe so I could give it a try on my own and while they’re not as good as her’s, they are delicious!

These bite-size treats are perfect for a cookie tray and you will find yourself sneaking them all throughout the day. The recipe does take time because a lot of chilling needs to happen but the recipe itself is super simple and you only need FOUR ingredients!

Marcy’s Buckeye Balls

  • 1 cup softened margarine (do not use butter!  they will not set up)
  • 2 cups peanut butter
  • 4 ½ cups confectionary sugar
  • 6 ounces chocolate chips or wafers ( I use the wafers but I have friends who have used the chips.

Mix butter, peanut butter and sugar together and chill until firm.

Roll tsp. size mix into balls.  Small is better!  Place on cookie sheet lined with wax paper and chill until firm again.

Melt chocolate in double boiler. or use a bowl set in a pan of hot water on very low heat.  You do not want to overheat the chocolate, it hardens. If that happens, a TBS. of Crisco will usually thin it.

Dip the peanut butter balls into the chocolate using a toothpick or skewer and then set back on your pan.

Chill again.  Store in refrigerator to keep firm.

Take them off the pan once chilled and store in any container separating the layers with wax paper. And listen, if they don’t look great (like the holes that are in mine) don’t worry because they’re going to taste great!
