This soup reminds me of the cold days of football season when I was growing up. Every Sunday we would always make Annie’s Sausage Soup and watch the Cleveland Browns lose. Thinking of this recipe takes me right back to my childhood home and I can smell the soup and hear my dad yelling at the TV….memories! This will be the perfect recipe to warm you up and it reheats great for leftovers or meal planning! What I love about this recipe is really what I love about most of the recipes I share, it’s easy and delicious!

Liz’s Kitchen: Annie’s Sausage Soup Recipe
Ingredients
- 6-8 Sweet or Hot Italian Sausage Your choice
- 1 tbsp butter
- 1 large onion sliced into crescents
- 6 cups water
- 1 tbsp beef bouillon or 3 cubes
- 28 oz crushed tomatoes
- 1/4 cup green pepper diced
- 1/4 tsp oregano
- 1/4 tsp basil
- 1/4 tsp black pepper
- 2 small zucchini diced
- 2 oz linguine broke into 2″ pieces
- 2 tbsp parmesan cheese
Instructions
- Fully cook your sausage and pierce the skin. Let cool.
- While the sausage is cooking, get your mise en place out of the way. Slice your onions into crescents and dice your green pepper.
- Add the butter to the pot/dutch oven and saute the onions until soft.
- Once the onions are soft add the water, beef bouillon, tomatoes, green pepper, oregano, basil, and pepper. Bring the mixture to a full boil.
- While the mixture is heating up, cut your cooled sausage into 1/2″ rounds. Once the mixture is at a full boil add the sausage rounds, zucchini, linguine (make sure you’ve cut these into 2-inch pieces), and parmesan cheese. Reduce to the heat to simmer and cover. (This is supposed to be a healthier recipe, but here I would add some salt and let it build with the flavor.)
- Let soup cook while stirring occasionally for 30-45 minutes. You want the veggies and noodles to cook.
- Serve with a side of your favorite bread and enjoy!

Liz that looks delicious. Well have to make some This weekend. However I would have to add garlic. Just because it’s so healthy for us as tastes so good with a tomatoe base.
YES! I agree with the garlic too. In fact, next time I make that I will add the garlic with the onion. I will also be adding salt with the rest of the spices! Let me know it goes!
Going to try this but instead of green pepper I’m going to use yellow. And a jalapeno pepper. I don’t really like zucchini so I think I’ll try carrots. I’ll let you know how it taste.
