Liz’s Kitchen: Aunt Karen’s Chicken Casserole Recipe

Our Aunt Karen isn’t much of a cook but her one casserole is a staple in our family. It makes sense – it’s tasty, filling and easy to make. This is one of those recipes where you have eight-thousand things going on but somehow you still need to get dinner on the table. Everything mixes together and then you pop it in the oven! So simple!

The other thing I love about this recipe…there is always leftovers. Another great meal prep recipe! This could be Sunday dinner and lunch for the week! Enjoy!

Liz’s Kitchen: Aunt Karen’s Chicken Casserole Recipe

The prep is easy, the meal is tasty and there’s plenty to go around!

Ingredients

  • 6 breasts chicken
  • 2 cups swiss cheese
  • 2 cans cream of chicken
  • 2/3 cup water
  • 2 sticks melted butter
  • 1 bag Pepperidge Farm Stuffing

Instructions

  • Preheat oven to 350.  Take your chicken and cut them up into cubes. Mix cream of chicken and water in a large bowl, then mix in cheese and chicken.
  • Pour the chicken mixture into a greased 9×13.
  • Take the melted butter and mix with the bag of stuffing. Pour the stuffing over the chicken, evenly covering the casserole dish. 
  • Cover and cook the casserole for an hour and fifteen minutes. Remove the foil and cook for 15 minutes more to let the stuffing brown up. 
  • Remove from the oven and let cool. Serve and enjoy!

Notes

The original recipe doesn’t call for it but adding about a tablespoon of pepper to the chicken mixture before you pour it into the casserole dish really helps! 

Here’s the original recipe I snagged from my grandma’s recipe box. Someone asked me the other days “Why does it have to be Pepperidge Farm stuffing?” I guess it doesn’t, but that’s what it says in the recipe! 🙂
