Dice your onion and red pepper into small dices.
Heat your pan over medium heat and add the olive oil. Saute your pepper and onions until soft and let cool.
While your onion and peppers cool you can prepare your loaf pan. Take your brown sugar and line the bottom of the pan], patting it down. Next, take your bbq sauce and drizzle it over the brown sugar. This is going to make a sort of gravy that is the KEY to this recipe!
Now take your beef and add the bread crumbs, eggs, milk, onion powder, garlic powder, black pepper, salt, and the cooled peppers and onions. And mix well.
Take your mix and add it to the loaf pan. Cook in a 375-degree oven for about an hour and fifteen minutes (or to temp at 160).
Remove from the oven and let cool. Slice into pieces and drizzle the gravy over the slice of meatloaf. Serve with your favorites side (mash potatoes).
