Liz’s Kitchen: Sarah’s Meatloaf Recipe

This was the first time I ever had a “guest star” in #LizsKitchen and we had so much fun! My friend Sarah is a way better cook than me and I’m ok with that because she cooks for me often! She has been wanting to be part of #LizsKitchen on my Instagram page for a while and we finally made it happen. If you’ve noticed I have a lot of family and friend’s recipes on here and it’s all on purpsoe. The best recipes come from your family and friends. When we got together to make this she didn’t have “measurements”, so we had a lot of fun figuring those out for you. This meatloaf recipe is going to turn into one of your favorites, her twist on the bottom almost caramelizes the edges of the meatloaf…it’s ridiculous.

Liz’s Kitchen: Sarah’s Meatloaf Recipe

With this sweet twist to a classic dish, you will spice-up dinner time at your house!

Ingredients

  • 3 lbs beef
  • 2 cups Italian bread crumbs
  • 2 eggs
  • 1 red bell pepper
  • 1 onion
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 1/2 cup brown sugar
  • 3/4 cup bbq sauce
  • 1/4 cup milk

Instructions

  • Dice your onion and red pepper into small dices. 
  • Heat your pan over medium heat and add the olive oil. Saute your pepper and onions until soft and let cool. 
  • While your onion and peppers cool you can prepare your loaf pan. Take your brown sugar and line the bottom of the pan], patting it down. Next, take your bbq sauce and drizzle it over the brown sugar. This is going to make a sort of gravy that is the KEY to this recipe!
  • Now take your beef and add the bread crumbs, eggs, milk, onion powder, garlic powder, black pepper, salt, and the cooled peppers and onions. And mix well. 
  • Take your mix and add it to the loaf pan. Cook in a 375-degree oven for about an hour and fifteen minutes (or to temp at 160).
  • Remove from the oven and let cool. Slice into pieces and drizzle the gravy over the slice of meatloaf. Serve with your favorites side (mash potatoes).

    Made this for dinner today. One problem with the recipe. No milk listed in the ingredients but calls for in directions. I sort of winged it with the amount.
